Honestly? He may or may not. I've known guys that'll stare at there ex simply because there's history, and because they remember what they'd had. Sometimes it's lingering feelings, but that doesn't mean that they'd be real now.
And for the hand shake? Guys are weird. They do the strangest things. And, also (going back to the lingering feelings), he may have done that to stop himself from hugging/kissing you, like he used to do when you left when you were together. It becomes a habit.
If you've only seen him once in the past year, then I wouldn't bank too much on him still wanting to get back together with you. A lot can change in a year. However, if you want to find out for sure, you'll have to ask him, straight up.
