Campus Food: No Bake Energy Bites

Students don’t often have a lot of time to make snacks, especially on days with morning classes or days with a lot of classes. This often leads to spending money getting unhealthy food out of vending machines and having no energy or brain power when midday comes around. No Bake Energy Bites are a great solution to this problem. With a very small amount of ingredients, these snacks are easy to make in a dorm room, small enough to easily pack for school, and can help keep you sustained between meals.

They’re my personal favourite snack for school days as a batch can last you a few days and they taste great. This recipe takes approximately 10-15 minutes to complete.

Ingredients:

  • 1 cup of peanut butter
  • 3/4 cup of chocolate chips
  • 1/3 cup of honey
  • 1 cup of coconut
  • 1 cup of oats
  • 1 teaspoon of vanilla
  • Optional: 1/2 cup of ground flax seed
  • Optional: 1 tablespoon of chia seeds

Directions:

  1. Mix all ingredients in a large bowl. Make sure to mix well as some of the dry ingredients have a harder time sticking together
  2. Put the mixture in the refrigerator for approximately 5 minutes so that it hardens slightly
  3. Take the mixture out of the refrigerator and roll the mixture into balls
  4. Store at room temperature

This recipe is really easy to play with, so try out different ingredients and see what you like best!

  • If you want to make the recipe healthier, you can swap out the ingredients for organic alternatives.
  • Almond butter, cashew butter, or even nut free alternatives can be used in place of peanut butter.
  • Raisins or dried cranberries are good substitutes if you want to avoid chocolate chips.
  • If you find that the mixture is too dry, add more honey.
  • Once rolled into balls, the bites can be stored in the fridge to keep them cooler and harder.
