Fall Favourites: Pumpkin Spice Blossom Cookies

Cookies are the favourite easy snack or dessert of people everywhere, but the usual chocolate chip or oatmeal can get a little bit boring. If you’re looking to put an autumn spin on a classic, why not try Pumpkin Spice Blossom Cookies!

Ingredients

  • 1/2 cup softened butter
  • 2 large eggs
  • 1 and 1/2 cups sugar
  • 2 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 package of Hershey’s Pumpkin Spice Kisses
  • 2 tablespoons milk (if needed)
  • Extra 1/2 cup sugar to roll dough in
  • Wax paper
  • Baking sheet

Directions

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius)
  2. Place the Kisses in a small bowl and put in the freezer until ready to use. This prevents them from melting when they are put in the cookies
  3. In a large bowl, mix the butter and sugar together until smooth. Add the vanilla and eggs to the mixture and beat until light and fluffy.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg and ginger. Slowly start to add this to the butter and sugar mixture, adding little bits and mixing them in until the mixtures are just combined.
  5. If the dough seems really crumbly, add about 2 tablespoons of milk to help the dough form.
  6. Put the 1/2 cup of extra sugar into a small bowl. Scoop out tablespoon-sized balls of the dough and roll them in the sugar before placing them on the baking sheet.
  7. Bake for 8 minutes, or until the bottoms start to brown.
  8. Remove the cookies from the oven and flatten slightly with the back of a spatula to give the top a flatter shape and make it easier to stick the Kisses in.
  9. After the cookies have cooled for about 3 minutes, take the Kisses out of the freezer and stick them in the top of the cookies.
  10. Let the cookies cool and then enjoy!

Tip

  • The Kisses may start to melt after a few minutes of being in the cookies. If this is the case, you can stick the entire batch of cookies in the freezer, or just play around with the melted Kisses!
