Mibba Eats: Peach Oatmeal Pancakes

Some of the most common breakfast foods in the world include pancakes, oatmeal, and fruit; at times, it’s not uncommon to pair either pancakes or oatmeal with fruit for a sweet but wholesome meal. Whether you eat it in the morning or enjoy breakfast for dinner, it’s never a let-down. But what if you combined all three for an exciting new twist on a simple homemade treat? With this healthy and delicious recipe, you’re sure to fall in love, satisfy that sweet tooth and feel great all at the same time!

Ingredients

  • 1 fresh peach; peeled, pitted and diced
  • 1 ⅔ cups pancake mix
  • 1 cup quick cooking oats, uncooked
  • ½ cup light brown sugar, packed
  • 1 tablespoon cinnamon
  • 2 egg whites, beaten
  • 1 tablespoon vanilla extract

Directions

  1. In a large bowl, combine pancake mix, oats, brown sugar and cinnamon; mix well.
  2. Stir in remaining ingredients, making sure everything is evenly blended.
  3. Pour batter by 1/4 cupfuls onto a hot, buttered griddle or frying pan. Turn pancakes when bubbles form and start to pop; cook the other side until golden.
  4. Serve with whipped cream, an icing drizzle or any of your favorite toppings to hone it to your liking!
