Mibba Eats: Herb Infused Fruit Popsicles

Summertime means warm weather, which gets most people craving something cold and delicious. While it can be tempting to reach for something store bought, since it’s so quick and easy, that extra sugar can bring down your energy and make you feel plain gross. If you’re looking for a healthier alternative that will still satisfy your sweet tooth, homemade, herb-infused, fruit popsicles will hit the spot! They are easy to make, taste delicious, and are a great alternative during the summer months.

What You Need:

  • 2 cups water
  • 1/2 cup agave nectar or honey
  • 1 whole sprig of basil
  • 3-4 thinly sliced leaves of basil
  • 1 lemon, juiced
  • Thinly sliced strawberries, amount depends on how fruity you would like the popsicles to be
  • Popsicle molds

What You Do:

  1. Boil one cup of water. Once the water is boiling, add agave nectar or honey.
  2. Remove from heat and add one cup of cold water, the juice from the lemon, and the sprig of basil.
  3. Stir the mixture and let it cool.
  4. Add thinly sliced strawberries and thinly sliced leaves of basil to popsicle molds.
  5. Remove basil sprig from cooled syrup mixture and pour the liquid into the popsicle molds
  6. Freeze liquid for approximately two hours, or until completely frozen through.
  7. Serve and enjoy!
Notes:

If you’d like to switch up the fruit and herb in the popsicles, try replacing the strawberries with blackberries, the lemon juice with lime juice, and the basil with sage. Make sure the blackberries are cut small enough to allow the popsicles to freeze.
