How to Make Sopapillas

Sopapillas are very fun and easy to make. Similar to Elephant Ears. They use very basic ingredients and are enjoyable by anyone. A good idea for bringing in food to a Spanish class! I've brought them in many times.

Ingredients

  • 1 pkg. dry yeast
  • 1/4 c lukewarm water
  • 3/4 c milk
  • 6 tbsp. sugar
  • 1 tsp. salt
  • 2 tbsp butter
  • 1 egg beaten
  • 3 c flour
  • approx. 2 inches cooking oil

Instructions

  1. Soften yeast in lukewarm water and set aside.
  2. combine milk, sugar, and salt and bring to a boil. Remove it from the heat and stir in butter. Allow to cool until no longer hot. Stir in beaten egg and yeast mixture. Gradually add flour.
  3. Work with hands if mixture begins to be too thick to stir. Cover the dough with a damp cloth and allow to rise until doubled in size, about 1 1/2 hours.
  4. Punch down, turn out onto a lightly floured board, knead briefly until dough is smooth. Cover and let rest for 15 minutes. Roll about 1/2 inch thick square and cut with a 2 inch cookie cutter.
  5. Heat oil to 350 degrees.
  6. Cook a few at a time, browning one side, and turning to the other side. They will puff up.
  7. Drain on absorbent paper and drizzle powdered sugar over the top.
  8. and the most fun part- they are ready to eat!

Be careful with hot oil, it burns!
