Carrot Burgers

Carrot burgers are a vitamin packed, low calorie alternative to your traditional burger. With a few simple ingredients, you can enjoy your own delicious veggie patties!

Ingredients

  • 2 Cups of Finely Chopped Carrots
  • 1/2 Cup Chopped Celery
  • 1/2 Cup Chopped Bell Peppers
  • 1 Green Onion, Diced
  • 2 Cups Crushed Cornflakes
  • 2 Beaten Eggs, or Equivalent Egg Substitute
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 2-3 tbs of Olive Oil, or Nonstick Spray

Directions

In a small saucepan, bring 2 cups water to a boil. Add in carrots, celery, and peppers. Boil for 5-10 minutes, until carrots are tender.

Meanwhile in a bowl, beat the eggs until fluffy. Stir in crushed cornflakes, onions, pepper, garlic and drained vegetables when done boiling.

Form mixture into five or six circular patties. Make sure your patty has a uniform thickness, or the middle of your patty may not cook properly.

In a skillet, heat oil over medium heat. Place the patties in the skillet, and cook on each side until lightly browned, or about 5 minutes per side.

Other Notes

If you have difficulty getting your patties to stick together, refrigerate them 30 minutes before cooking, allowing the ingredients time to bind together. A tablespoon of water or two can also help keep patties together.

These patties can be eaten on a bun like a traditional burger or served over a lettuce salad. Ketchup and mustard make ideal toppings, along with steak sauces and ranch dressing.
