White Chocolate Cookies

It has taken me a while to find a good recipe for white chocolate chip cookies; most of the ones I see either contain other fruits or chocolate, or taste extremely sweet. However, this recipe is one of the best I know of and comprises different elements of many recipes that I have tried before.

 

Ingredients

  • 150g caster sugar
  • 150g butter or margarine
  • 1 egg, beaten
  • vanilla essence, to taste
  • 200g plain flour
  • 1tsp baking powder
  • 100g white chocolate chips

Method

  1. Preheat the oven to 180 C.
  2. Using a wooden spoon or a hand-held electric whisk, mix the butter and sugar together until the mixture is light and creamy.
  3. Add the eggs one at a time, stirring between each go to prevent to mixture from becoming lumpy. With the final egg, add the vanilla essence.
  4. Sift in the flour and baking powder and combine with the rest of the mixture.
  5. Add the chocolate chips and stir until they are fully distributed throughout the mixture.
  6. On a lined baking tray, place rounded tablespoons of the mixture. Leave plenty of space between them, as they will spread while baking.
  7. Bake in the oven for 12-15 minutes, or until golden. They may still be slightly soft when they are taken out, but will firm up as they cool.
