Baked Zucchini Fries

A wonderful thing happens when you stick sliced zucchini in the oven. It gets a nice slightly-sweet taste with a crunchy outside and almost gooey center. Add the great taste of parmesan cheese and the added crunch of breadcrumbs and you've got the perfect healthy snack. Try out this semi-sweet baked zucchini fries and enjoy.

What You'll Need

  • 3 zucchinis
  • 2 eggs
  • 1 cup of all-purpose flour
  • 1 cup of Italian bread crumbs or panko chips
  • 1/2 cup of finely grated parmesan cheese
  • 3 large ziplock bags

What You'll Do

  1. Preheat the oven to 425 F.
  2. Fill one ziplock bag with 1 cup of all-purpose flour, fill the other with 1/2 cup of parmesan and 1cup of bread crumbs, and fill the last with 2 eggs and 2 tablespoons of water. Squish around the ziplock bag with eggs so that the eggs are scrambled. Set aside.
  3. Cut the zucchini in half width-wise and then cut those halves in half length-wise. Then cut the pieces into 1/2 in thick sticks.
  4. Place the zucchini sticks in the flour-filled ziplock bag and seal the bag closed. Shake the bag until all the sticks are well-coated in flour.
  5. Remove the sticks from the flour-filled ziplock and place them (one by one) in the egg-filled ziplock. Seal the bag closed and shake/swish the bag around until the sticks are well-coated with the egg.
  6. Remove the sticks from the egg-filled ziplock and place them (one by one) in the breadcrumbs-filled ziplock. Seal the bag closed and shake the bag around until the sticks are well-coated with breadcrumbs.
  7. Remove the sticks from the breadcrumbs ziplock and place them (one by one) on a non-stick cooking/baking sheet (or a foil-covered cooking/baking sheet).
  8. Place the sticks in the oven. After 30 minutes, check the sticks. If they are not yet crispy, return to the oven for another ten/fifteen minutes.
  9. Once the sticks are brown and crispy, remove them from the oven and let cool for five minutes.
