Zucchini Bread

Who knew that you could not only incorporate fruits into bread, but vegetables, too? While some of you may have grown up eating banana bread, zucchini bread was a recipe that my mom made on special holidays, or just to have something fun and unique to snack on. This recipe is fairly easy to make, with most of the ingredients probably just stowed away in your cabinet so you don't have to go out to buy them! It will surely delight all, even with its different (but wonderful) taste!

Ingredients

  • 3 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 3 teaspoons of cinnamon
  • 3 eggs
  • 1 cup of vegetable oil
  • 2 and 1/4 cups of white sugar
  • 3 teaspoons of vanilla extract
  • 2 cups of grated zucchini
  • 1 cup of chopped walnuts

Zucchini Bread Delights

  1. Grease and flour two 8 x 4 inch pans. Preheat the oven to 325°F.
  2. Sift the flour, salt, baking powder, baking soda, and cinnamon together into a bowl.
  3. Beat the eggs, oil, vanilla, and sugar together in a large bowl. Add the sifted ingredients and beat well. Stir in the zucchini and nuts until it is blended well. Pour the mixture into the pans.
  4. Bake this for 40 to 60 minutes. Cool in the pan for 20 minutes and then remove from the pan to completely cool.
  5. Eat, and enjoy! In my perspective, this is best served with some fresh milk. This lovely, light treat is served as 2 loaves, and is perfect for an on-the-go sweet, but not fattening snack!
