Tomato, Feta and Sweet Onion Pizza

Because I have to eat healthier, and pizza from Domino’s, Little Caesars, and Pizza Hut are not an option for me, I have to make up my own healthy pizza recipes.

Ingredients

Dough

  • 2 ½ cups of flour
  • 2 ¾ tsp. backing powder (or baking soda, if using, omit salt)
  • 1 tsp. salt
  • 1 tbsp. oil
  • ¾ to 1 cup water

Toppings

  • Desired amount of pizza sauce
  • Desired amount of feta cheese
  • Desired amount of mozzarella
  • ½ of an onion
  • 1 or 2 roma tomato(es) (or a small tomato)
  • 1 tbsp. oregano
  • 1 tsp. Italian seasoning
  • ½ tsp. garlic powder
  • ½ tsp. pepper
  • ½ tsp. chopped basil
  • Olive oil

Instructions

  1. Preheat oven to 400 degrees F.
  2. Mix dry ingredients of dough then add wet ingredients. Stir until the dough is soft and not sticky. If it’s stiff, add a little more water.
  3. Knead dough on floured surface for 3 to 4 minutes.
  4. Roll out dough into desired size and place on a non-stick pan with cornmeal on the bottom (if you don’t have cornmeal, that’s fine)
  5. Lightly baste dough with olive oil with a brush and use half the Italian seasoning to cover the top of dough.
  6. Bake dough for 15 to 25 minutes.
  7. While pizza dough is cooking, slice onion into thin slices and brown on medium high heat. Once the onion starts to sweat, reduce heat to medium heat and let brown.
  8. As the onion is browning, slice the 1 or 2 tomato(es) into thin slices (slightly thicker than pepperoni size).
  9. When dough is finished cooking, spread desired amount of pizza sauce on the crust then add the cheese and tomato slices.
  10. Reduce oven temperature to 350 degrees F.
  11. Onions should go on after they are very dark brown and sweet. Once onions reach sweetness, spread them on the pizza.
  12. Add the oregano, garlic powder, basil, pepper, and the remaining Italian seasoning to the pizza.
  13. Let pizza cook for 10 to 15 minutes or until cheese has melted.
