Pumpkin Bread

I have been making this bread every year for Samhain, and I always include it in my alter. This is a great recipe for anyone who loves bread with a good kick to it. You have to try, and trust me you won't regret it.

Ingredients

  • 3 cups of canned pureed pumpkin
  • 4 cups of sugar (or substitutes)
  • 1 1/2 cups of virgin olive oil
  • 4 1/2 cups of flour, sifted
  • 6 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla
  • between 1 and 1/2 tsp of ground cinnamon
  • between 1 and 1/2 tsp of ground nutmeg
  • between 1 and 1/2 tsp ofground cloves

Instructions

  1. Preheat the oven to 350 F degrees.
  2. Prepare the three loaf pans with grease and flour to keep everything from sticking.
  3. In a bowl, blend together the pumpkin, oil, sugar, vanilla, and eggs. Blend together and make sure there are no unnecessary clumps in the mixture. Make sure you scrape the bottom of the bowl to make sure you've gotten everything.
  4. Separately, mix together the flour with the cinnamon, nutmeg, and cloves. Make sure to mix the dry ingredients together well.
  5. Add the dry ingredients into the pumpkin bowl and begin to mix vigorously until it is mixed together well.
  6. Divide the dough evenly into the three pans.
  7. Set all of the loaf pans in the oven for 45 minutes to an hour.
  8. Check with a butter knife when you think it may be done. If there no dough sticks to the knife when you poke the bread in the center and pull it out, then it is done.
