Blueberry Muffins

Everyone loves moist blueberry muffins in the morning, and here is the recipe I've used for a long time and it never fails me!

Ingredients

Batter

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1/3 cup of vegetable oil
  • 1 egg
  • 2/3 cup of milk
  • 1 1/2 cups of fresh blueberries (really try to use fresh, I have used frozen once before and it didn't taste as good)

Topping

  • 3 tablespoons of brown sugar
  • 2 tablespoons of all-purpose flour
  • 1 tablespoon of butter- cubed and softened
  • 1 1/2 teaspoon of ground cinnamon

Directions

Blueberry Muffins

  1. Preheat oven to 400 degrees.
  2. Grease muffin pan or line with muffin liners.
  3. In one bowl, combine flour, sugar, salt and baking powder. Sift together and set aside.
  4. In a separate bowl, combine egg, vegetable oil, and milk. Mix thoroughly.
  5. Add in dry ingredients and mix thoroughly.
  6. Fold in blueberries.

Topping

The purpose of the topping is to make the muffins sweeter because without it they're not very sweet (in my opinion). It is optional and you are welcome to skip this step.

  1. In a bowl, add sugar, flour, butter and cinnamon. Mix with fork.
  2. Sprinkle on muffins before baking.
  3. Bake in oven for 20 - 25 minutes.
