Mexican Casserole

You will need:

  • 1 lb. ground meat
  • 1 package taco seasoning
  • 1/4 cup onion, sauteed (optional)
  • 1 can enchilida sauce
  • 1 can cream of chicken soup
  • 1 can refried beans (optional)
  • 2 cups shredded cheese (I use Mexican Four Cheese)
  • 1 package flour tortillas

What to do:

Spray an 8x8 casserole dish with nonstick spray. Combine ground meat, taco seasoning, and onion. Brown ground meat and drain off fat. Then, add enchilida sauce, cream of chicken, and refried beans; mix together well. In 8x8 dish, layer flour tortillas, meat mixture and cheese untill all meat mixture is used. Bake at 350° until heated and all cheese is melted.

Tips:

  • I am not an onion or bean eater, so I always leave them out, unless making it for someone else. It doesn't affect much other than the consistency of the meat mixture, so reduce enchilida sauce/cream of chicken soup until mixture is to your personal liking if you leave the onions and beans out.
  • I use Mission Homestyle Flour Tortillas, and they're about medium sized, which is just right for an 8x8. If you are doubling the recipe, I would suggest using a 9x13 in pan and using large tortillas.
  • When layering, I start with a flour tortilla on the botton of the dish. I use a Pyrex 8x8, and I usually get two layers- tortilla, meat, cheese, tortilla, meat, cheese.
