Spicy Vegetarian Fried Rice

Ketchup fried rice is a delicious Asian-inspired dish that is simple and quick to make. One can throw in almost anything edible to the frying rice to make a sufficient but delicious meal. However, if someone is looking for a meal that won't be too harsh on the waistline and still be fulfilling, please direct the person here to a step by step tutorial on a low-calorie, spicy and vegetarian twist on the classic Asian-styled ketchup fried rice!

Material and Ingredients

Serving size: 1

  • 5/8 cup of white, long-grained, regular cooked rice
  • 4 ounces of silken tofu
  • 1 tbsp. of Hunt's Tomato ketchup
  • 4 tbsps. of Pace Picante Hot Sauce (or any other hot sauce)
  • 1/2 cup of unsalted whole corn kernels
  • Salt and pepper for flavoring
  • PAM Olive Oil Spray (or just any other brand of olive oil)
  • Spatula and frying pan
  • Zip-lock bag or plastic container

Preparing the Tofu

  1. Press the silken tofu on a clean paper towels to get rid of water.
  2. After the tofu is completely drained of water, cut the tofu into small cubes.
  3. Place the tofu cubes inside a zip-lock bag or plastic container and pour the hot sauce inside.
  4. Seal the bag shut and shake the mixture to get the cubes coated with the hot sauce.
  5. Leave the tofu inside the refrigerator for at least one hour.

Cooking the Tofu with the Corn Kernels

  1. Cook the whole corn kernels in boiling water until they are soft. Season with salt and pepper.
  2. Drain the corn kernels and place them aside.
  3. Coat the frying pan with the oil spray on low to medium heat before putting the hot sauce covered tofu in to fry.
  4. Move and stir the tofu for five minutes with a spatula before pouring the drained corn kernels into the mixture.
  5. Continue to constantly move and stir the tofu and corn mixture all the while cutting the tofu into smaller pieces for around five more minutes. Put in more hot sauce for a spicier taste.
  6. Take the mixture out of the pan and onto a plate before prepping the pan up with more oil spray.

Frying the Rice

  1. Place the rice into the prepped frying pan and warm the rice up by moving it about and around inside the pan.
  2. Squeeze around a tablespoon of ketchup onto the rice.
  3. Mix and stir the ketchup and rice until the rice is coated.
  4. Fry the mixture for approximately five to seven minutes or until the rice is salmon-colored, browned around the edge or bottom and obviously fried.
  5. Pour back the tofu and corn mixture into the frying pan and mix it into the fried rice for a minute or two.
  6. Pour the mixture out onto a plate and enjoy!
