What You Need

  • 1 cup cornmeal
  • 1 1/3 cup sugar
  • 3 cup all-purpose flour
  • 2 tablespoons of brown sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 cup melted butter
  • 1 cup of evaporated milk
  • 1 1/2 cup of whole milk
  • 1 teaspoon of vanilla extract
  • 4 eggs beaten

What You Do

  1. Preheat the oven to 350 F.
  2. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt together.
  3. In a second bowl, mix the brown sugar, vanilla extract, whole milk, evaporate milk, melted butter, and eggs together.
  4. Combine the two mixtures into the larger bowl. Using a handmixer or whisk, blend well until most of the lumps are out. Make sure all the ingredients are combined.
  5. Pour the mixture into a deep foil pan, or a greased baking dish.
  6. Allow the cornbread mix to bake for 55 minutes or until the top is golden brown. Make sure the center is cooked by placing a knife into the center, if it with a bit of cooked cornbread on it, it's ready.
  7. Allow the cornbread to cool out of the oven for at least five minutes before serving.
  8. Serve warm with butter.

  • Store the remainder of the cornbread in it's baking pan and cover with foil.
  • Cornbread is great when paired with Easy Chili or served with warm honey drizzled on top.
