Vegetable Bean Salad

This is an old family recipe that came from my mamaw's cookbook! I wanted to share it so more people can enjoy!

Ingredients:

  • 1 can of corn
  • 1 can of kidney beans
  • 1 can of black beans
  • 1/2 a green pepper
  • 1/2 an onion
  • 2 stalks of celery
  • 1/2 vegetable oil
  • 1/2 cup sugar
  • 1/4 cup of vinegar
  • A dash of salt
  • A dash of paprika

Rinse corn and each can of beans (each separately) in a colander in the sink. Dice up the green pepper, onion, and celery into very small pieces.

Combine: Corn, kidney beans, black beans, green pepper, onion, and celery in a medium to large mixing bowl.

Combine: Oil, vinegar, sugar, and paprika in a small bowl. Stir and then heat for 30-45 seconds in microwave. Stir well until sugar is completely dissolved.

Add the oil mix to the larger bowl of beans and vegetables. Stir well until all ingredients are mixed well.

Store in refrigerator overnight to chill. I always pour some of the juice out the next day, but it's personal preference how much you'd like! Try the recipe and let me know how it turned out! I hope you enjoy!
