Kärleksmums

Swedish desserts are actually quite good. Something I love is a cake called ”kärleksmums”. Kärlek means love and mums basically means ... uhm, it means yummy. This is the perfect dessert for people that love chocolate in all forms.

This cake is perfect for a cup of coffee or tea or just when you feel like eating something sweet.

Ingredients:

For the cake:

  • 5 eggs
  • 4 dl sugar
  • 4,5 dl flour
  • 3 teaspoons baking powder
  • 5 tablespoons cocoa
  • 300 grams butter
  • 2 dl water
  • 200 grams milk chocolate or dark chocolate

For the glaze:

  • 2 dl cream
  • 2 tablespoons coffee
  • 200 grams dark chocolate
  • Coconut flakes as topping

How to do:

The cake:

  1. Preheat the oven to 200ºC/392ºF
  2. Whip the eggs and the sugar until it gets porous.
  3. Mix the flour, baking powder and the cocoa in a bowl.
  4. Sift the flour mix into the egg batter and mix it together.
  5. Melt the butter and blend it with the water, then mix it with the batter.
  6. Put some baking paper on a plate and pour the batter onto the plate.
  7. Chop the chocolate and sprinkle the batter with the chocolate.
  8. Bake the cake in the oven for 15 minutes.

Tips: Check the cake with a thin knife or fork and don’t let the cake get too dry

The glaze:

  1. Boil the cream up, add the coffee and 200 grams chopped, dark chocolate.
  2. Let the glaze cool off a bit before spreading it over the baked cake.
  3. Sprinkle the cake with coconut flakes and cut it into small squares!

Tips: When you let the glaze cool off, stir in it every now and then to prevent that it hardens.
