Prinsesstårta

The so called ”prinsesstårta” is a Swedish classic. In English we could call it princess cake. Prinsesstårta has been kind of a symbol for Swedish cakes since way back in time. It’s a classic cake with vanilla cream and tasty strawberry jam.

Ingredients

Cake base:

  • 225 grams butter
  • 2,5 dl sugar
  • 3 eggs
  • 4 dl flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla (sugar)

Vanilla cream:

  • 1 vanilla bean
  • 2 dl milk
  • 1 dl cream
  • 2 egg yolks
  • 3/4 dl syrup
  • 1 tablespoon corn starch
  • 3 gelatin sheets

Other stuff:

  • Marzipan (preferably green because that’s the classic colour, but any colour will work)
  • 4 dl cream
  • 1,5 dl strawberry jam
  • Icing sugar

How to Do It

Cake base:

  1. Preheat the oven to 175°C/347°F
  2. Butter and sprinkle a baking tin with crumbs.
  3. Whip the butter and the sugar until it gets porous.
  4. Stir down the eggs in the batter.
  5. Mix the dry ingredients and add the mix to the batter.
  6. Pour the batter into the baking tin and smooth it out.
  7. Bake the cake in the lower part of the oven for ca 35 - 40 minutes.
  8. Let the cake cool off.

Tips: Try with a thin knife or a fork if the cake is done. It can’t be to dry!

Vanilla cream:

  1. Cut the vanilla bean into half and scrape the seeds out.
  2. Put the vanilla bean and the seeds in a pot.
  3. Add the rest of the ingredients for the vanilla cream except the gelatin sheets.
  4. Whisk the ingredients together and have the stove on low heat. When you can see the first bubble, take the pot off the stove.
  5. Put the gelatin sheets in cold water for ca 5 minutes.
  6. Add the gelatin sheets to the cream and stir until they melt.
  7. Put it somewhere cold (outside if it’s cold, the frige ...), and stir until the cream has cooled off.
  8. Put it in the fridge to harden for 2 hours.

Tips: Since the cream has to harden, you could do the cream a day before you make the cake.

The Cake:

  1. Make sure to take the marzipan out of the fridge to soften a bit.
  2. Whip the cream, but not too much.
  3. Take 2/3 of the whipped cream and add it to the vanilla cream and stir.
  4. Cut the cake base into three different pieces. Be careful! It’s difficult to cut it without ruin it completely.
  5. Now it’s time to put the cake together! Start with a cake base, then spread a layer of vanilla cream on top of it. Then take the next cake base. But instead of another layer of vanilla cream, spread a layer of strawberry jam. Then put on the last piece of cake base on top. Spread the rest of the whipped cream around and on top of the cake. Make the cream a bit round on the top, it will look better then.
  6. Roll out the marzipan and carefully put it on top of the cake. Smooth out the marzipan around the cake.
  7. Garnish with some icing sugar and if you want to you can make a rose out of marzipan to put on the top!
