Sushi

As many people known, sushi is a japanse dish made out of various raw fish and seafood, along with vegetables and other treats. It is fun to watch the different shapes and forms sushi comes in, but even more fun to actually make your own sushi where you get to decide your own ingredients after your own taste buds.

Ingredients

  • 6 dl sushi rice
  • 7.5 dl water
  • 4 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 2 tablespoons granulated sugar
  • 1 ½ tsp salt
  • 2 seagrass, 2 sheets of toasted nori
  • 1 piece bamboo mat
  • 2 pcs crab sticks
  • ½ Each avocado
  • 300g salmon fillet, skinless, boneless
  • 200g of tuna
  • 200g filet of witch
  • 2 scallops
  • 4 teaspoons wasabi

Extras

  • Japanese soy sauce
  • Pickled ginger
  • Wasabi

Concoction

  1. Meshi Sushi, Sushi rice: Measure the rice in a bowl and wash the rice in several chances of water. Then let the rice rest in plenty of cold water for about 30 minutes. Strain off the water and put the rice in a saucepan with 7 ½ deciliters of water. Make sure it gets to boil, then lower the heat and let the rice of cook with the lid on for roughly 30 mins. Then pull it off the heat but leave the rice to be under the lid about 30 minutes. [picture example]
  2. Mix the rice vinegar, mirin, sugar and salt in a saucepan and heat until the sugar has dissolved, then let it cool. When the rice is cooked, pour it in a bowl. Rinse your wooden ladle or the gear you use so that the rice doesn't stick. Pour the vinegar mixture over the rice and let aerate for 20 minutes. Feel free to fan it with a kitchen towel so that it'll be shiny.
  3. Nori-Maki, Seaweed roll: Place a sheet of seawood on a small bamboo mat and apply a later of rice on it. Manage the rice with wet hands so it doesn't stick to to them. Do not make the rice layer too thick, or you won't be able to roll it into a roll. Add a central strand of crabstick, salmon and avocado on top of the rice. All the three ingredients are cut into about 1 inch thick strings. If you want to spread a little wasabi on the rice to get some more flavour, feel free to do so. [picture example]

    Carefully roll up the bamboo mat and wet the edges of it with a little water to draw it together so it sticks.
  4. Nigiri Sushi, risk capes: This is the most common form of sushi. Cut the fish and mussles to about 4mm thin slices. Shape the small risk capes with your hands, once again water your hands so that the rice won't stick. Apply a thin layer of wasabi on the risk cape and add the bit of fish on top of it.   5. Cut the seaweed roll with a sharp nife and add it to a plate along with the other pieces of sushi and serve them freshly made with soy sauce, wasabi and gari, which is picked ginger. Eat it with chopsticks or your fingers and when you dip the sushi piece into the soy sauce, only dip the fish side. Also if you want to neutralize the taste, eat a piece of pickled ginger between the sushi pieces.
