Breakfast Burritos

Need a new Sunday morning breakfast idea? Or maybe a recipe you can cook and store ahead of time? These breakfast burritos are perfect for those who are on the go or those who like to sit around the table Sunday morning. If you make them ahead of time just wrap them in tinfoil and store in the freezer until you’re ready to pop them in the oven or microwave. Not only do they taste amazing, but they are packed with protein and vegetables to start your day off right.

Ingredients

  • Diced ham (or two ham steaks cut up)
  • Eggs (8 to 9)
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • Cheese of your preference, shredded
  • Burrito size shells (1 bag)

Directions

  1. Throw the diced ham, peppers and onion in a frying pan with butter until peppers and onions are tender.
  2. Drain juice when done frying.
  3. Put back in the frying pan and put in eggs in mixture and scramble until done.
  4. Put cheese in until melted (You can use as much cheese as you want, I used half a bag).
  5. Put Burrito shells in foil and put into 200 degree oven until warm.
  6. Put mixture in the shells and roll up.
