Puffy Chocolate Chip Cookies
Autumn is coming and that means cold days and early nights. Why not lighten up the season with some delicious cookies?
Ingredients
- 1/2 cup (4 oz) of unsalted butter, softened
- 1/4 cup (2oz) of cream cheese, softened
- 1 egg
- 2 teaspoons of vanilla extract
- 1 cup (8 oz) of brown sugar
- 1/4 cup (2oz) of granulated sugar
- 2 1/4 (18 oz) cup of all purpose flour
- 1 teaspoon of baking soda
- 2 teaspoons of cornstarch
- 1/2 teaspoon of salt
- 1 3/4 (14 oz) cups of chocolate chips
- 1/2 cup (4 oz) of semi-sweet baker's chocolate
What to Do
Step One
If the butter and cream cheese aren't already softened, you can pop them in the microwave for about 10 seconds at a time until they are. (But be sure not to melt them.)
Step Two
Add the butter, cream cheese, egg, sugars, and vanilla extract to a mixing bowl. Using a handmixer or a whisk, mix the ingredients until well incorporated. The point is not only to combine the ingredients but to allow the sugars to melt into the liquids - so whisk until the mixture no longer feels gritty. (You can also mix for a few minutes then allow the mixture to sit while you prepare the rest of the ingredients. Once you do, go back and whisk the mixture for a few more minutes. This should give the sugar enough time to melt into the liquids.)
Step Three
Chop your semi-sweet baker's chocolate into small pieces (about the size of your chocolate chips) and set aside.
Step Four
In another bowl, whisk the flour, cornstarch, baking soda, and salt together.
Step Five
Once your liquids are ready to go, add the flour mixture to the bowl and (using a spoon or whisk) mix the ingredients until they're just combined. Do not overmix, you're just trying to get all the dry ingredients incorporated into the liquid ingredients.
Step Six
After you've done this, gently fold all your chocolate (chocolate chips and chocolate chunks) into the dough.
Step Seven
Separate your dough into small balls (about as much as a spoonful) and allow them to chill in the fridge for about 2 hours (or more).
Step Eight
Cover a cookie sheet with some aluminum foil and place your cookies about two inches apart. With the palm of your hand (or a big spoon), squish the cookie balls down a bit so they're about a 1/2 inch thick. Then lift them off the aluminium foil, to make sure they don't stick or burn while cookie.
Step Nine
Place them in the oven for 10 minutes (or up to 15 minutes, if you want your cookies to be a little brown). Remove them from the oven and allow to cool before eating or removing from the cookie sheet.
