Winter Harvest Salad

Salads make for a delicious and healthy meal for any occasion. Whether served as a main course or a side dish, this winter harvest salad with a toasted sesame ginger dressing will be sure to fill you up.

For the salad:

  • 100 g / 3.5 oz brown rice
  • 100 g / 3.5 oz red lentils
  • 150 g / 5 oz brussels sprouts, shredded
  • 3/4 tbsp lemon juice
  • 3 clementines
  • 3 tbsp dried cranberries
  • 3 handfuls roasted pecans, shelled

For the dressing:

  • 1/4 cup canola oil
  • 1/4 cup toasted sesame oil
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 cloves minced garlic
  • 1 tbsp minced ginger

Instructions:

  1. Prepare the brown rice and red lentils separately as instructed.
  2. Once the lentils are cooked, place them and the shredded brussels sprouts in a bowl. Toss well with the lemon juice and let sit for ten minutes to soften.
  3. In a small bowl, mix together the canola oil, toasted sesame oil, honey, rice vinegar, soy sauce, minced garlic, and minced ginger to create the toasted sesame ginger dressing.
  4. In a large serving bowl, combine the brown rice with the brussels sprout and lentils mixture.
  5. Top with the dried cranberries, pecans, and clementines.
  6. Drizzle the dressing on top of the salad, toss well, and dig in!
