Winter Harvest Salad
Salads make for a delicious and healthy meal for any occasion. Whether served as a main course or a side dish, this winter harvest salad with a toasted sesame ginger dressing will be sure to fill you up.
For the salad:
- 100 g / 3.5 oz brown rice
- 100 g / 3.5 oz red lentils
- 150 g / 5 oz brussels sprouts, shredded
- 3/4 tbsp lemon juice
- 3 clementines
- 3 tbsp dried cranberries
- 3 handfuls roasted pecans, shelled
For the dressing:
- 1/4 cup canola oil
- 1/4 cup toasted sesame oil
- 2 tbsp honey
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 cloves minced garlic
- 1 tbsp minced ginger
Instructions:
- Prepare the brown rice and red lentils separately as instructed.
- Once the lentils are cooked, place them and the shredded brussels sprouts in a bowl. Toss well with the lemon juice and let sit for ten minutes to soften.
- In a small bowl, mix together the canola oil, toasted sesame oil, honey, rice vinegar, soy sauce, minced garlic, and minced ginger to create the toasted sesame ginger dressing.
- In a large serving bowl, combine the brown rice with the brussels sprout and lentils mixture.
- Top with the dried cranberries, pecans, and clementines.
- Drizzle the dressing on top of the salad, toss well, and dig in!
