Quinoa Sweet Potato Balls

Whether you’re looking for an easy to make healthy snack or a unique appetiser for your next party, these quinoa sweet potato balls are sure to delight.

Ingredients:

  • 1/2 cup quinoa
  • 1/2 sesame seeds
  • 1 cup cornflour
  • 2 cups sweet potato (about one large sweet potato makes two cups chopped)
  • 1 egg
  • 1 tsp curry powder
  • 1 tsp cumin
  • Cayenne pepper to taste
  • Honey

Instructions:

  1. Cook the quinoa according to the instructions. (Typically it's 2 cups water per 1 cup quinoa at 15 minutes on low heat.)
  2. Place the fully cooked quinoa aside to cool completely. If the quinoa is too warm, it makes forming the mixture into balls difficult. You can also place it in the fridge temporarily for a quick chill.
  3. Peel and cut the sweet potato in small chunks. Place the sweet potato pieces into a food processor and blend until puréed.
  4. In a medium mixing bowl, combine the 1/2 cup cool cooked quinoa, the 2 cups blended sweet potato, 1 cup cornflour, egg, 1 tsp curry powder, and 1 tsp cumin. Mix well until fully combined.
  5. At this point, you can add cayenne pepper to taste depending on desired spiciness.
  6. Preheat the oven to 355°F/180°C.
  7. Put the 1/2 cup sesame seeds into a bowl big enough to roll small balls of the mixture in thoroughly.
  8. Taking small handfuls of the mixture, roll them into tiny balls and coat them in the sesame seeds.
  9. Place the balls on baking tray lined with parchment paper and place in the oven for 35 minutes.
  10. When done baking, let cool slightly and use the honey as a dipping sauce.
