Curry Pasta

Pasta, the food of the gods. Virtually anything can be done with pasta and the price tag that comes along with it isn’t one that will skin you alive! This simple, cheap pasta dish combines macaroni elbow pasta and curry sauce to create a tasty meal that can be cooked for either a light dinner or lunch!

You will need:

  • Macaroni elbow pasta (enough for one bowl of pasta)
  • 300ml water
  • 2 tablespoons of plain flour
  • 1 vegetable stock cube (broken into pieces)
  • Curry powder
  • Almond milk
  • Salt / pepper to taste

Method:

  1. Place the pasta into a pot of water with a pinch of salt. Bring the water to a rolling boil and then allow to simmer for between 7 and 10 minutes.
  2. While you are waiting for the pasta itself to cook, start on the sauce. Place the 300ml of water into a pot alongside the stock cube and the flour. Mix together thoroughly. Add between 3 and 5 tablespoons of curry powder. Bring to a boil and allow to simmer for 5 minutes, stirring periodically.
  3. When the mix is smooth, and a golden-brown colour, add about 25ml of almond milk (more if you want the sauce to be milder) to the mix. Stir and allow the sauce to cook until it begins to thicken. At this point, taste the sauce. Add any salt / pepper or additional
  4. Drain the pasta, and place it back into the pot. Mix in the sauce and leave to stand for a minute. Pour the pasta into a bowl and enjoy!
