Healthy Lasagne

I learnt how to make lasagne in this healthy way at my place of work, which is a really delicious way of making this classic dish. You can make this recipe on a low budget, and it's good for people who want a healthy, balanced diet.

Ingredients:

For the lasagne mix

  • 1 tbsp olive oil
  • 500g minced meat (pork, lamb, beef)
  • 1 red onion, diced
  • 1 rep pepper, chopped (any vegetable can be used)
  • 1 large tin of chopped tomatoes
  • half a tube of tomato puree
  • 2 beef oxo cubes
  • 1 tbsp garlic puree/2 garlic cloves

For the white sauce

  • 600ml milk
  • 50g plain flour
  • 50g butter
  • handful of grated cheese

Method

Lasange Mix

  1. Heat saucepan on a medium heat, pouring in the olive oil and onion.
  2. Simmer for five minutes, or until the onion is softened.
  3. Break up the mince and add to the pan, simmering until the mince browns.
  4. Take the pan off the heat and transfer the mince to a colander to drain the fat off, before transferring back to the pan.
  5. Add the chopped pepper, garlic puree, chopped tomatoes, tomato puree and oxo cubes and stir well with a wooden spoon.
  6. Leave to cook for 30 minutes, or until vegetables are soft.

White Sauce

  1. Add butter to a different pan and put onto a medium heat.
  2. Melt the butter then gradually add the flour, stirring well.
  3. Stir in the milk, taking care to keep stirring well to avoid curdling.
  4. Stir for 10 minutes, or until the sauce is thick.

Adding Together

  1. Spoon a layer of lasagne mix into a deep dish, adding lasagne sheets before adding a layer of white sauce.
  2. Repeat until you have used both the white sauce, and lasagne mix.
  3. Sprinkle a handful of grated cheese on top before putting in the oven for 45 minutes, or until cooked through.
