Natural Cocoa Bites

My mother has always urged me to carry something easy and delicious in my bag in order to ensure that during busy days and forgetful mornings, I will never have to go hungry. These little balls of joy are amazing at fulfilling this duty. This freezer-friendly, time economic recipe will flood your mouth with coconut and chocolate flavours that will leave you wishing for more!

Ingredients

  • 2 cups of raw almonds
  • 3 tablespoons of cocoa
  • 1 cup of shredded coconut
  • Extra coconut for toppings
  • 1 teaspoon of vanilla essence
  • 2 cups of pitted medjool dates, chopped
  • 1 cup of water

Instructions

  1. Mix the almonds and coconut in a food processor. Place it on a small bowl and add the cocoa.
  2. Mix the dates, water and vanilla essence in a food processor until it has a paste-like consistency. If it's too runny, add more dates and if it's too solid, add more water.
  3. Pour the wet ingredients into the dry ingredients and mix it well.
  4. The consistency is right when you are able to form balls easily without it sticking on your hands. If it is doing such, add more coconut into the mixture.
  5. Form balls according to the size you desire.
  6. Place balls on a tray and refrigerate them for at least 15 minutes before serving.

Note

  • It may be refrigerated if you intend on eating it within a week. If not, freeze it for conserving purposes and unfreeze it 20 minutes before eating it.
