Natural Cocoa Bites
My mother has always urged me to carry something easy and delicious in my bag in order to ensure that during busy days and forgetful mornings, I will never have to go hungry. These little balls of joy are amazing at fulfilling this duty. This freezer-friendly, time economic recipe will flood your mouth with coconut and chocolate flavours that will leave you wishing for more!
Ingredients
- 2 cups of raw almonds
- 3 tablespoons of cocoa
- 1 cup of shredded coconut
- Extra coconut for toppings
- 1 teaspoon of vanilla essence
- 2 cups of pitted medjool dates, chopped
- 1 cup of water
Instructions
- Mix the almonds and coconut in a food processor. Place it on a small bowl and add the cocoa.
- Mix the dates, water and vanilla essence in a food processor until it has a paste-like consistency. If it's too runny, add more dates and if it's too solid, add more water.
- Pour the wet ingredients into the dry ingredients and mix it well.
- The consistency is right when you are able to form balls easily without it sticking on your hands. If it is doing such, add more coconut into the mixture.
- Form balls according to the size you desire.
- Place balls on a tray and refrigerate them for at least 15 minutes before serving.
Note
- It may be refrigerated if you intend on eating it within a week. If not, freeze it for conserving purposes and unfreeze it 20 minutes before eating it.
