I don't know about the symbolism stuff as that has a lot to do with your beliefs, but I know birds can sense fear. They're really good at sensing emotions. My parrot can sense when people are annoyed and angry and when they're scared. If someone unfamiliar put their hand up to him and he could sense they were scared he'd probably bite them because he knows he could get away with it.
