Mibba Eats: Tree Hugger Granola

As spring begins in the western hemisphere, so do the workouts in anticipation of summer as the weather warms up. Most people want to eat healthier to compliment this new routine, with some even adding this as part of their new year resolution. These individuals often find themselves looking for tasty alternatives to the guilty pleasures in their lives, such as potato chips and chocolate. With this granola recipe, you can make a delicious cereal for the mornings, an easy snack or can create something more such as granola bars!

Ingredients

  • 4 cups old-fashioned oats, uncooked
  • 1 cup chopped pecans
  • 1 cup sliced almonds
  • ¼ cup canola or sunflower oil
  • ½ cup of honey
  • ½ cup light brown sugar, packed
  • 2 tablespoons pineapple juice (optional)
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt

Directions

  1. Preheat oven to 325°F.
  2. In a large bowl, combine oats, almonds, and pecans; toss to mix.
  3. In a separate bowl, stir together remaining ingredients.
  4. Pour oil mixture over oat mixture and stir until everything is evenly coated.
  5. Spread granola out on a lightly greased cookie sheet, preferably around 15” x 10”.
  6. Bake for about 25 minutes, stirring every 5-10 minutes until golden.

* Allow cooling on the baking sheet. Store in airtight container. Makes about 7-8 cups.
