Bake them at 350. I don't care if you live in a high altitude, I do too and I still use 350.

Take them out a bit early. If the box says 12-15 minutes, take them out at 12 minutes. Make sure you stick a knife through to see if the cake sticks to the knife. If the knife comes out clean then take your cupcakes out now.

Don't let them sit in pan. Take the out right away and lay them on cooling racks. They should cool in about 15 to 20 minutes. Frost them as soon as they cool down and make sure you cover them up so the frosting doesn't get hard.

If you leave the cupcakes in the tin after they came out of the oven the outsides will bake longer and make the cake taste hard, thus the cake doesn't taste as moist as it really is.

I've been baking since I was 9. I know what I'm doing lol.

I tried applesauce and also sour cream before, but those were for large cakes and it was just something I've wanted to try after seeing it on the Food Network. I don't have a problem with dry cupcakes...mine are always moist. You could try putting a little extra oil in them, but I wouldn't recommend that. Just go with countrygirl626296.

Most of the time when I bake cupcakes, I bake them for the lowest time suggested on the box, check them, and then bake them a few more minutes if they're not done. Like if it says 12-15 minutes, I'll bake them for 12, and then if they're not done, bake them for 3 more minutes. Usually mine turn out pretty moist.

According to most people, no. :3 Some say it adds a little tang, but it's not noticeable. I know my cousin uses it in her chocolate cakes, and I've never noticed. x3

@ Dru Burnt The Ashes: Thank you! :)

@Rorscach : Would that change the flavor of the cupcakes? :o

Putting a cup of mayonnaise actually helps a lot when it comes to making chocolate cake moist. :3

It's a really old secret, actually. It dates back to the WWII era. :3
