Chicken Fajitas

This is NOT a drive thru Fajita, this is a Prime Time in your face Amazing Fajita!

This is perfect for both new and expierenced cooks! The flavors are tangy and a little spicy, and go great with lime cilantro white rice!! [Another easy fix] You can add or take away some of the spices, depending on what level of heat you enjoy, as is it's a pretty mild sauce.



Ingredients:

  • 2 tsp minced garlic [fresh or preminced]
  • 1/4 of a medium onion
  • 1/3 cup lime juice [bottled or fresh]
  • 1/4 cup oil
  • 1/2 tsp cumin powder
  • 1/4 tsp paprika powder
  • 1/2 tsp mustard [spicy or yellow]
  • 1/8 tsp black pepper
  • 1/4 tsp dried oregano [not fresh]
  • 2 pinches of celery salt
  • 1/2 tsp salt
  • 1/2 cup water
  • 1 to 1 1/2 pounds of cooked chicken
  • 1 bag of tortillas

[This will work for steak tips and pork as well]

Directions

  1. Dice up all your chicken into same size 1 inch peices and set aside.
  2. Combine all other ingrediants into a blender and pulse until well blended.
  3. Heat up stove and pan with about 2-3 tbs of oil.
  4. Combine chicken and sauce together in the pan and frequently stirring.
  5. Lower the heat to about medium/low and allow to simmer until the sauce is thickened.
  6. Enjoy with your favorite toppings!
