Chicken A La King and Mexican Chicken Salad

These are really good recipe's from my 7th grade year we made in foods! We ate them in the same day. They are both chicken recipes, Chicken A La King and Mexican Chicken Salad.

 

 

 

Chicken A La King

  • 1/4 cup margarine or butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cooked chicken breast (remove skin and bones)
  • 5 Biscuits


Directions:

  1. Preheat oven to 450 Degrees Fahrenheit
  2. Place biscuits on cookie sheet lined with foil. Bake for 8-10 minutes or until top of the biscuits are golden brown.
  3. Shred cooked chicken using fork; set it aside.
  4. Melt margarine and stir in flour, salt, and pepper and Cook over med-low (#6 on electric stoves) stirring constantly, until mixture is bubbly.
  5. REMOVE FROM HEAT. Stir in chicken broth, shredded chicken and milk.
  6. Return pan to the heat, stirring constantly. REMOVE FROM THE HEAT AS SOON AS MIXTURE BUBBLES.
  7. Serve over biscuits that have been split in half like an English Muffin.


Mexican Chicken Salad

  • 1 chicken breast (cooked)
  • 1/2 can kidney beans (rinse and drain)
  • 1 green onion
  • 1/2 head lettuce torn into small pieces (Salad size pieces)
  • 1/2 cup of tortilla chips in small pieces (Doritos's work great, and give lots of flavor)
  • 1/2 tomato
  • Mexicali bressing (recipe below)*
  • Optional (but good!): 1/2 cup shredded cheddar cheese

 

Directions:

  1. Shred chicken using a fork; set aside.
  2. Tear lettuce into bit size pieces in a large bowl.
  3. Cut a small piece off each end of the green onion, throw them away, and slice the middle rest.
  4. Cut tomato into wedges. Shred Cheddar Cheese (If using).
  5. Add onions, beans, cheese (if using), crushed tortilla chips, and tomatoes to lettuce.

 

Dressing:

  • 2 Tablespoons milk
  • 1/4 cup mayonnaise
  • 2 Tablespoons ketchup
  • 1/2 teaspoon chili powder
  • 1/4 garlic salt

 

  1. Mix all ingredients together.
  2. Chill until nice and cold.

 

Just before serving, mix dressing with salad.
