White Chocolate Cookies
It has taken me a while to find a good recipe for white chocolate chip cookies; most of the ones I see either contain other fruits or chocolate, or taste extremely sweet. However, this recipe is one of the best I know of and comprises different elements of many recipes that I have tried before.
Ingredients
- 150g caster sugar
- 150g butter or margarine
- 1 egg, beaten
- vanilla essence, to taste
- 200g plain flour
- 1tsp baking powder
- 100g white chocolate chips
Method
- Preheat the oven to 180 C.
- Using a wooden spoon or a hand-held electric whisk, mix the butter and sugar together until the mixture is light and creamy.
- Add the eggs one at a time, stirring between each go to prevent to mixture from becoming lumpy. With the final egg, add the vanilla essence.
- Sift in the flour and baking powder and combine with the rest of the mixture.
- Add the chocolate chips and stir until they are fully distributed throughout the mixture.
- On a lined baking tray, place rounded tablespoons of the mixture. Leave plenty of space between them, as they will spread while baking.
- Bake in the oven for 12-15 minutes, or until golden. They may still be slightly soft when they are taken out, but will firm up as they cool.
