Broccoli Cheese Soup

With the near-constant frigid temperatures and “wintery mix” of precipitation, a cozy night in may be much more appealing than braving the weather. And what better to accompany a warm night inside than delicious soup?

Ingredients

  • 8 oz of cream cheese
  • 16 oz of Velveeta Pasteurized Cheese product
  • 20 oz of frozen chopped broccoli
  • ½ cup of chopped onions
  • 4 cups of milk
  • 2 tbsp of butter
  • 2 tbsp of flour

Preparing your ingredients:

  • Cut Velveeta and cream cheese into ½ in cubes.
  • Heat frozen chopped broccoli according to the packaging and drain.
  • Chop onions.

Preparing the soup:

In a pot, cook the chopped onions in butter until tender. Once tender, mix in the flour with a whisk until well-blended.

Add the milk and cubed cream cheese to the pot. Cook on medium-heat until the cream cheese melts. Be sure to stir frequently.

Once the cream cheese is melted and well-mixed with the milk, add the cubed Velveeta cheese and the cooked chopped broccoli. Stirring occasionally, keep on heat until the Velveeta has melted.

When all the ingredients have combined, remove the pot from the fire and serve yourself a hot bowl!

Add-ons

  • For a heartier meal, add roasted chicken (cubed) to the soup after the Velveeta has melted.
  • As a nice garnish, add a couple of slices of avocado to your bowl after serving.
