Hot Potato Salad

Potato salad can be enjoyed cold or hot. This is one of my favorite recipes and I want to share it with you all.

Ingredients:

  • 6 medium potatoes cubed and cooked
  • 1/2 lb Velveeta cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped onion
  • 1/4 lb bacon, fried and crumbled

Topping:

  • 1/4 lb bacon, fried and crumbled
  • 1/2 cup bread crumbs

Procedure:

  1. Preheat oven to 425 degrees.
  2. In a large bowl, melt Velveeta cheese in the microwave
  3. Add mayonnaise and mix well
  4. Add onions and bacon crumbs and mix well
  5. Stir in the drained cooked potatoes
  6. Place in a 9x13 casserole dish, sprayed with cooking spray(I use Pam)
  7. Sprinkle the bread crumbs and bacon crumbs on top
  8. Place in the oven and bake for 30 minutes.
  9. Serve hot and enjoy.

(For a smaller batch, just halve the ingredients.)
