Hot Potato Salad
Potato salad can be enjoyed cold or hot. This is one of my favorite recipes and I want to share it with you all.
Ingredients:
- 6 medium potatoes cubed and cooked
- 1/2 lb Velveeta cheese
- 1/2 cup mayonnaise
- 1/4 cup chopped onion
- 1/4 lb bacon, fried and crumbled
Topping:
- 1/4 lb bacon, fried and crumbled
- 1/2 cup bread crumbs
Procedure:
- Preheat oven to 425 degrees.
- In a large bowl, melt Velveeta cheese in the microwave
- Add mayonnaise and mix well
- Add onions and bacon crumbs and mix well
- Stir in the drained cooked potatoes
- Place in a 9x13 casserole dish, sprayed with cooking spray(I use Pam)
- Sprinkle the bread crumbs and bacon crumbs on top
- Place in the oven and bake for 30 minutes.
- Serve hot and enjoy.
(For a smaller batch, just halve the ingredients.)
