Homemade Coconut Ice Cream

I have such a weak spot for coconut. I just love it… aside from real coconut and the real coconut milk… just can’t do it. I was looking for more ice cream flavors to make, because I could tell my family was getting tired of the same old strawberry, chocolate, vanilla and I found this online it is amazing! I have definitely added this to my book of recipes, yes I do keep one.


Ingredients

  • 1 cup of milk
  • 1 (14 ounces) can of cream of coconut (Be sure you get cream of coconut and not coconut milk. They are not the same at ALL. If you cannot find cream of coconut then swap this out with sweetened condensed milk and add ½ teaspoons of coconut extract.)
  • 1 ½ cups of heavy cream
  • 1 ½ cups of sweetened flaked coconut (optional)

Directions

With a food processor, combine the milk and cream of coconut and mix thoroughly. Stir in the cream and flaked coconut. (Smells so delicious when doing all this, I guess it’s just me.) Next pour it into the container of an ice cream maker. Freeze according to the manufacturer’s instructions.

Simple and yummy! I must say I have quite a few ice cream recipes. You can never have too many.
