Simple Vanilla Cupcakes

Making cupcakes from scratch doesn’t have to be difficult or costly. With this little recipe, you can have homemade cupcakes in less than hour without a trip to the grocers.

Ingredients

  • ½ cup softened butter
  • ½ cup sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp milk

* Yields 12 cupcakes

  1. Preheat oven to 350 F (180 C).
  2. Mix ½ cup (one stick) butter and ½ cup sugar in a large bowl – using a wooden spoon or electric hand-mixer – until the batter is light and fluffy.
  3. Gradually beat in two eggs, one tablespoon at a time, until thoroughly mixed.
  4. Add in 1 tsp vanilla extract. Mix well.
  5. Sift 1 cup flour, 1 ½ tsp baking powder, and ½ tsp salt into the bowl. Fold into the mix until well-combined. (Be sure not to mix too much or too hard, this will take all the air out of your batter and your cupcakes will be too dense.)
  6. Fold in 1 tbsp milk.
  7. Line your cupcake pan with paper/foil liners. Scoop a spoonful of your batter into each cup. (Each should be about 2/3 filled.)
  8. Bake in the oven for 15 – 20 minutes. Then remove from the oven. Cupcakes should be firm and springy to the touch.
  9. Let cool for 10 minutes. Then remove from the pan and eat!
