* Online Measurement Converter for those who use the metric system.
- ½ cup softened butter
- ½ cup sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 cup flour
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 tbsp milk
* Yields 12 cupcakes
- Preheat oven to 350 F (180 C).
- Mix ½ cup (one stick) butter and ½ cup sugar in a large bowl – using a wooden spoon or electric hand-mixer – until the batter is light and fluffy.
- Gradually beat in two eggs, one tablespoon at a time, until thoroughly mixed.
- Add in 1 tsp vanilla extract. Mix well.
- Sift 1 cup flour, 1 ½ tsp baking powder, and ½ tsp salt into the bowl. Fold into the mix until well-combined. (Be sure not to mix too much or too hard, this will take all the air out of your batter and your cupcakes will be too dense.)
- Fold in 1 tbsp milk.
- Line your cupcake pan with paper/foil liners. Scoop a spoonful of your batter into each cup. (Each should be about 2/3 filled.)
- Bake in the oven for 15 – 20 minutes. Then remove from the oven. Cupcakes should be firm and springy to the touch.
- Let cool for 10 minutes. Then remove from the pan and eat!
Enjoy!
