Tuna Macaroni Salad

I love making macaroni salads. They are good both hot and cold. Macaroni salad is just one of those many recipes that are enjoyable any time of the year. Here is my recipe for the way I make tuna macaroni salad.

Ingredients:

  • 1 12oz can of tuna (I use StarKist, but Chicken of the Sea is fine too. Also, you can use more tuna if you want. It doesn’t necessarily have to be just 12oz.)
  • 2 cups of shell pasta (You can also use bow tie or penne. I just like how the shell pasta does in this dish.)
  • Mayo
  • Garlic Powder
  • Salt
  • Pepper
  • Creole seasoning
  • ½ cup of diced Onion
  • ½ cup of crumbled bacon (You can use bacon bits if you want.)
  • 1 tsp of Canola Oil (Any oil will do. I just prefer Canola.)

Directions:

  1. In a medium sized pot, bring water to a boil. (Depending on how much pasta you actually use, just follow the direction for the proper water measured.)
  2. Add your pasta to the boiling water, onions and add in the oil. (The oil helps to keep the pasta from sticking together. Also, I add the onions at this stage to soften them, but you can add them with the tuna for crunchy onions.)
  3. Strain the tuna to get rid of the excess liquid and add it to a medium size mixing bowl.
  4. After the pasta has finished cooking and has been drained, add the pasta into the bowl with the tuna.
  5. Add as little or as much mayo to suit your taste. Add the garlic, Creole seasoning, salt and pepper to taste and the bacon.
  6. Mix gently so that the pasta isn’t destroyed.

Note: You can either serve this up hot or you can set it in the refrigerator to cool. Enjoy!
