No-Bake Peanut Butter Pie

If you’re not so amazing in the kitchen, this is a quick and easy three-ingredient recipe for a scrumptious peanut butter pie. Compared to most dessert recipes, this pie is also relatively healthy because low-fat vanilla Greek yogurt is used in place of cream cheese, and along with the peanut butter, it’s basically a protein powerhouse. The only aspect of this pie that is rather indulgent is the premade crust, but you could easily make your own healthier pie crust if you choose to.

Trust me, it doesn’t take a huge slice to make you feel full and satisfy that sweet tooth.

Ingredients

  • One 32-ounce container of low-fat vanilla Greek yogurt
  • 1 cup of creamy peanut butter. To help balance out the tartness of all the Greek yogurt, I like to use one of Peanut Butter & Co.’s chocolate-blended peanut butters (they have a white chocolate one and a dark chocolate one that are readily available in chain supermarkets such as Target and Walmart), but regular peanut butter works just as well.
  • One premade chocolate pie crust

How to Make

  1. In a large mixing bowl, mix together all of the Greek yogurt with the peanut butter. Warning: it does take quite a bit of elbow grease to get the two ingredients blended together well.
  2. Evenly distribute the yogurt-peanut butter mixture in the pie crust.
  3. Let the pie set in the refrigerator for at least four hours. Overnight is best.
