Yellow Rice and Chicken

I love making this meal for lazy, comfort days. It's easy and simple to make. I'm posting this for a friend of mine on here since she dislikes the rice meal made at her place. This is for you Adulation. Enjoy.

Ingredients:

  • 2 - 5oz bags of Vigo's Yellow Rice mix
  • 1 small packet of four sliced chicken breast.
  • 2 tbsp of butter

Procedure:

Put the chicken in a big pot and cover with water. Boil the chicken until it is cooked all the way through. Take the chicken out and let it cool off before shredding it with a fork.

Pour the remaining water that you boiled the chicken in and measure it out to the rice. You'll have to add a little more water to accomidate the chicken. Add the butter to the rice and bring to a boil. Add the shredded chicken and bring back to a boil. Put the top on and turn the heat down to a shimmer (When cooking rice, it's best to leave it alone to cook. Don't open the lid once you put it on or you'll be faced with cruchy rice and that is not yummy at all). Cook for thirty minutes. Serve and enjoy.
